Starting in 1987 the Cheese Dairy Tufertschwil is managed by Walter Räss jun. as a family business. Supported by his wife and one part-time employee 1.100.000 kilogrammes milk are processed to 110 tons of cheese, which are sold halfway around the world.
The name of the cheese roughly translates to «sitting in a cellar», which is exactly what it does, for ten months. During that time it is regularly washed with brine.
